  1. Preheat oven to 350 degrees.
  2. Cut the chicken into 1 inch pieces. Place chicken in a skillet with a little bit of oil and cook until no longer pink, about 15 mins.
  3. Meanwhile, cook egg noddles. Drain noodles.
  4. Chop onion.
  5. In a large bowl, combine 1/2 onion, the two cans of cream of chicken soup, cream cheese, milk, shredded chedder cheese and mixed veggies. Stir.
  6. Stir in cooked chicken.
  7. Stir in cooked noodles.
  8. Spray a 9 x 13 inch casserole dish with cooking spray.
  9. Evenly pour the chicken noodle mixture into the casserole dish.
  10. Sprinkle bread crumbs evenly on top.
  11. Melt butter and evenly pour over top the bread crumbs.
  12. Bake for 30 minutes.
