Bacon Cheeseburger Casserole

Who doesn’t love bacon cheeseburgers? And if you can make it low carb, all the better! This high protein, low carb main course is perfect for those of you who may be on a diet and trying to lower your carb/sugar intake. And if you’re not, feel free to eat this with a hunk of bread!

Check your pantry for ingredients, you may have to run to the store.

Brown the beef, garlic and minced onion in one skillet, while cooking the whole package of bacon in another skillet.

While that’s cooking, mix together the eggs, tomato paste, cream and salt/pepper in a bowl. Then add 1 1/2 cups of shredded chedder cheese.

When the beef and bacon are finished cooking, drain the beef and place in a 9 x 13 casserole dish. Crumble the bacon on top, and mix together.

Pour the egg mixture evenly over top the beef and bacon, top with the remaining 1/2 cup cheese.

Bake for 30 minutes at 350 degrees F.

Serve with veggies ( or bread!) and enjoy!

Instructions
  1. Preheat over to 350 degrees F
  2. In a skillet, brown beef with garlic and minced onion, drain grease
  3. In a separate skillet, cook all of the bacon and place on paper towels to absorb the grease
  4. In a bowl whisk together eggs, tomato paste, cream salt and pepper. Stir in 1 1/2 cups of cheese
  5. Place browned beef in 9 x 13 casserole dish, crumble bacon on top and mix together
  6. Pour egg mixture evenly over beef and bacon. Top with remaining 1/2 cup of cheese
  7. Bake at 350 degrees F for 30 minutes
