It’s a new year and time to try out a new recipe! This one combines my favorite ingredients: chicken, pasta and cheese. I will basically eat anything with these elements and this Chicken Noodle Bake is a delicious new meal with classic, old reliable ingredients.
Let’s begin with super easy ingredients that you may already have in your pantry.
First things first, boil the egg noodles until they are soft, and drain.
Meanwhile, cut the chicken into 1 inch pieces and cook in some oil in a skillet until no longer pink in the middle.
While the chicken and noodles are cooking, chop up the onion.
In a large bowl, mix the chopped onion, 2 cans of cream of chicken soup, cream cheese, milk, shredded chedder cheese and frozen veggies together. You may have to cut up the cream cheese into chucks to make it easier to mix.
Mix in the cooked chicken, the add the drained noodles. The hot ingredients will help melt the cream cheese. Thoroughly stir until well combined.
Spray a 9″ x 13″ casserole dish with cooking spray then spread the mixture in an even layer.
Evenly sprinkle the bread crumbs over the top.
Melt your butter (I usually pop it in the microwave for a few seconds), then pour over top the bread crumbs.
Bake for 30 minutes at 350 degrees F. The edges should be just turning brown.

- 2-3 Boneless, skinless, chicken breasts
- 1 1/2 cups Dry egg noodles
- 1/2 Onion
- 2 cans Cream of Chicken soup 10 oz each can
- 4 oz Cream cheese
- 1 cup Milk
- 2 cuos Shredded cheddar cheese
- 1 pkg Mixed Frozen Vegetables 10 oz bag
- 1 cup Bread crumbs
- 1/2 cup Butter 1 stick

- Preheat oven to 350 degrees.
- Cut the chicken into 1 inch pieces. Place chicken in a skillet with a little bit of oil and cook until no longer pink, about 15 mins.
- Meanwhile, cook egg noddles. Drain noodles.
- Chop onion.
- In a large bowl, combine 1/2 onion, the two cans of cream of chicken soup, cream cheese, milk, shredded chedder cheese and mixed veggies. Stir.
- Stir in cooked chicken.
- Stir in cooked noodles.
- Spray a 9 x 13 inch casserole dish with cooking spray.
- Evenly pour the chicken noodle mixture into the casserole dish.
- Sprinkle bread crumbs evenly on top.
- Melt butter and evenly pour over top the bread crumbs.
- Bake for 30 minutes.
