Philly Cheese Stuffed Peppers

Normally, I’m a carb loving maniac. But once in a while a healthy carb free meal shows up and is so delicious, I forget all about my carb cravings. With this fun, healthy twist on the classic Philly cheese steak sub, you’ll never even miss that bread. Green peppers are full of nutrients and add a wonderful flavor that everyone can enjoy!

Only a couple ingredients are needed for this easy family recipe.

First, chop up half an onion and one cup of mushrooms. You can use any kind of mushroom you like. Then, add the them to a skillet along with the olive oil and garlic. Cook for about 10 mins.

Now, slice up a package of roast beef and add it to the skillet. Cook for about 5 more mins.

Meanwhile, cut your green peppers lengthwise. Remove the spines and seeds, then place on a parchment paper lined cookie pan. Make sure the cookie pan has a lip on it.

Stuff each pepper with a slice of mozzarella cheese, then spoon the roast beef mixture in. Top each pepper with another slice of mozzarella cheese. Add a little bit of water to the pan (this is why you need a lip on it!). This will soften the peppers as they are cooking. Bake for 30 minutes.

And voila! A delicious no-carb alternative to a great classic. The best part is that you don’t even need a fork, just pick it up and take a bite!

  1. Pre-heat oven to 350 degrees F.
  2. Chop up the half onion and 1 cup of mushrooms.

  4. Slice up roast beef and add to skillet. Cook for 5 mins.
  5. Meanwhile cut green peppers in half lengthwise. Remove spines and seeds. Place peppers on a parchment paper lined, lipped cookie pan.
  6. Place one slice of mozzarella in each pepper. Spoon roast beef mixture into each pepper and top with another slice of mozzarella.
  7. Add a little water to cookie pan and bake for 30 minutes.

    What a genius idea!! I love stuff peppers but usually use rice in the mix, this is such a good alternative!

    THESE LOOK SOOOO GOOD! I am definitely going to have to try these. They look so simple to make too. Most the people in my house don’t like peppers though, so I might have to substitute that for them.

    This looks amazing! My husband loves philly cheese and stuffed peppers, but I never thought about combining the two. I’ll have to try these soon, he will love them.
