Ultimate banana bread

Well, it’s the end of the week and you reach into the fruit bowl, only to discover the bananas are brown! What to do with those over ripe bananas? Banana bread, of course! And not just plain old banana bread, my Ultimate Banana Bread. Chock full of nuts and chocolate chips, get ready to cut some extra big slices for everyone in the family.

First, pre-heat your oven to 375 degrees F. Soften up your butter in the microwave for about 30 seconds. Then add the butter and sugar to an electric mixing bowl; beat until creamy. I love my KichenAid Mixer! I have had it for about 7 years and it’s still going strong. If you want something to stand the test of time then KichenAid is your best friend!

Then add in the egg and bananas. Break up the bananas into chunks to help them mix in better.

In a separate bowl mix together your dry ingredients, the flour, baking soda and salt. Then slowly add in the flour mixture a little at a time, mixing every time you add more. Don’t forget to get your little helpers involved! This is a perfect time to start teaching little ones about mixing, measuring and hand-eye coordination.

Now pour the walnuts and pecans into a blender to chop them up. I use my Ninja Blender/Food Processor. It’s perfect for quickly chopping up nuts in a matter of seconds! Just make sure your don’t over process and end up with powered nuts!

Add in the nuts and chocolate chips to the batter and mix until combined.

Pour the batter into a greased 9″ x 5″ loaf pan and bake for 1 hour.

After the timer goes off, remove the pan from the oven. It’s very important to let the bread sit in the loaf pan for another 20 minutes. This ensures that it is cooked all the way through, and the center is not gooey. Make sure you use a toothpick or knife to check the center before you remove the bread from the loaf pan! Now break out the butter and enjoy this Ultimate Banana Bread with the whole family!

  5. Slowly add the flour mixture to the electric beater bowl and beat together.
  6. Chop up walnuts and pecans. Add them and the chocolate chips into the mixing bowl. Mix until just combined.
  7. Grease a loaf pan. Pour batter into the pan.
  8. Bake for 1 hour.
  9. Remove from oven and let sit in loaf pan another 20 minutes.
  10. Remove from pan and serve with butter!

    This looks delicious! I’ve never tried adding pecans and chocolate chips to my banana bread before. I’ll have to give it a try – thanks for sharing!
