Cheesy potatoes…yum! My two favorite words and comfort food at it’s greatest. Even picky eaters can’t turn down potatoes with cheese. And although they often take the place of a side dish, why not throw in some chicken and make it the main course! Get ready for Baked Potato & Chicken Casserole. Another one of my easy, throw it in a dish and bake it, recipes.
Some of my favorite recipes only call for a few simple ingredients, and this one is no exception!
First things first, dice up your potatoes and green onions. And cut up the chicken into 2 inch pieces, I use scissors for the chicken.
Spread half the potatoes in a greased 9″ x 13″ casserole dish. Put all the chicken on top of the potatoes. Sprinkle with salt and pepper.
Now add the bacon, one cup of cheese and half of the green onions to the dish. Make sure everything is spread evenly! Pour the rest of the potatoes in and top it with the remaining cheese and green onions.
Evenly pour the heavy whipping cream over the whole dish. Cut up your butter into chunks and place them, equally spaced, on top.
Cover with foil and bake for 50 minutes. Then, take the foil off and bake an additional 10 minutes.

- 8 Red potatoes
- 2 Boneless, skinless, chicken breasts
- 4.3 oz Crumbled bacon 1 Package
- 2 cups Shredded cheddar cheese
- 3 Green onions
- 1/2 cup Heavy whipping cream
- 4 Tbsp Butter
- Salt and pepper to taste

- Pre heat oven to 400 degrees F.
- Dice potatoes and green onions. Cut chicken into 2 inch pieces.
- Spray 9" x 13" casserole dish with cooking spray.
- Spread half of the diced potatoes in the bottom of the pan.
- Put all the chicken in the pan on top of the potatoes. Season with salt and pepper.
- Spread crumbled bacon, half the green onions and 1 cup of cheese evenly on the chicken.
- Pour the remaining potatoes on top. Add the other cup of cheese and remaining green onions to the pan.
- Evenly pour the heavy whipping cream over the whole dish. Cut up your butter into chunks and place them, equally spaced, on top.
- Cover with foil and cook for 50 mins.
- Remove foil and cook an additional 10 mins.
Serve with sour cream and enjoy!
