Meatloaf was always a staple meal growing up in my house, and that hasn’t changed now that I have my own family. I love how simple and yet filling it is as a main course. And as a bonus, my little one doesn’t even notice all the veggies he’s eating! These mini muffins are just as delicious as a meatloaf but perfectly proportioned into muffin sized bites.
First check the kitchen for your ingredients.
Then chop up your carrots, half an onion and half a green pepper.
Then throw everything into a large bowl and mix together.
Spray muffin tins with cooking spray and spoon mixture into each cup, filling them to the top.
Top each muffin with ketchup and spread into an even layer.
Then bake for 30 minutes and there you have it! Yummy no-fuss meatloaf, enjoy!

- 1/2 Onion
- 2 Carrots
- 1/2 Green pepper
- 1 Tbsp Minced garlic
- 1 cup Ketchup plus extra
- 1 1/2 lbs Ground beef
- 20 Crackers finely crushed
- 2 Tbsp Dijon mustard
- 2 tsp Worcestershire sauce
- 2 Eggs
- 1 Tbsp Mrs. Dash

- Pre-heat oven to 350 degrees F.
- Chop onion, carrots and green pepper.
- Mix together onion, carrots, green pepper, garlic, ketchup, ground beef, crushed crackers, mustard, Worcestershire sauce, eggs and seasoning in a large bowl until well combined.
- Spray muffin tin with cooking spray, spoon mixture into cups. Fill to the top of each cup.
- Top each muffin with a little ketchup and spread it evenly with the back of a spoon.
- Bake for 30 minutes.
