Parmesan Crumb Chicken

This is a dish I make all the time and is a favorite among friends and family. It’s so easy to make and perfectly portioned as a main course for lunch or dinner.

The ingredients are common and you may even have everything in your pantry already!

First I like to prepare my two dipping stations. I melt my butter in a microwave-safe bowl then pour it into a deep plate. Add in the lemon juice and minced garlic. I buy garlic already minced and ready to go from the grocery store (it cuts down on the prep time!) but you can always mince it yourself from garlic cloves.

Next are the breadcrumbs, parm cheese and seasonings.

Now you can go ahead and lay out your chicken breasts on a cutting board. Slice them into approximately two inch strips. This will probably leave you with two or three strips per breast, depending on size. Season with salt and pepper if you like.

Time for dipping! Coat both sides of each strip in the butter mixture, then do the same in the crumb mixture. Make sure you press the crumb mixture into the breast with your fingers so it really sticks! Place each finished strip in a greased 9 x 13 casserole dish. You may need more than one casserole dish. I usually use two so the breasts aren’t too crowded. Sprinkle more of the crumb mixture on top.

Finally, throw then in the oven and bake for 40 mins. Make sure the internal temperature reads 165! Enjoy with some veggies and mashed potatoes or mac and cheese.

Instructions
  1. Preheat oven to 350 degrees
  2. Spray a 9x13 casserole dish with cooking spray
  3. Mix the melted butter, lemon juice and garlic in a deep plate
  4. Mix the bread crumbs, parmesan/Romano cheese, parsley and oregano in a separate deep plate
  5. Cut chicken breasts into 2-inch strips, salt and pepper to taste
  6. Dip both sides of chicken in butter mixture
  7. Move chicken to crumb mixture and coat both sides generously, pressing the crumbs onto both sides with your fingers
  8. Place chicken in the prepared casserole dish (you may need another dish depending on the size of the chicken breasts) and sprinkle chicken with crumb mixture
  9. Bake for 40 minutes or until the internal temperature reads 165 degrees
